Chilling Your WineThe ideal temperatures for red and white wines are not, contrary to many opinions, warm and cold. Wine is far more complex than that, and deserves some thoughtful attention to optimal conditions in which to serve it. Wines such as chardonnay and pinot noir are best served in the mid-50s Fahrenheit. If the bottle is unchilled, pop it in the refrigerator for an hour or so. A medium red such as Shiraz will thrill you if served in the low 60s. This would take 45 minutes in the refrigerator. If you must use the freezer, 15 minutes should bring the bottles to a nice chill. Of course, you can skip the refrigerator dance altogether and treat yourself to a wine cooler that will cradle and comfort your wine at the ideal temperature at all times. |
